Appetizer idea: pita bread rolls with mushrooms and potatoes

Dishes made from thin Armenian pita bread are quick, easy and delicious
Appetizer rolls with a variety of fillings are made from pita bread. Pita sheets are used to make quick breakfasts, pies, and even replace lasagna sheets.

We offer a recipe for pita bread rolls filled with fried mushrooms and mashed potatoes, which can be served both hot and cold.

Ingredients: 2 thin Armenian lavash, 0.5 kg of potatoes, 300 g of mushrooms, 2 onions, dill, oil, black pepper, salt.

Lightly fry the chopped onion in vegetable oil, add the chopped mushrooms and fry, season with salt, until the liquid has completely evaporated.
Cut the peeled potatoes into small pieces, boil in salted water until tender, mash, add the fried mushrooms, chopped dill, pepper and mix well.
Spread the pita bread sheets on the table, put the prepared filling on them, spreading it evenly over the entire surface. Gently roll the pita bread into rolls and cut them across into 3-5 cm wide pieces.
Fry the prepared rolls in vegetable oil on both sides until golden brown.
Note to self: Before frying, dip the rolls in a beaten egg. To diversify your home menu, use grated cheese, cottage cheese with herbs, minced meat fried with onions, boiled chicken with melted cheese, fried or stewed seasonal vegetables as a filling. If you use champignons to make pita bread rolls, you can fry them immediately. Wild mushrooms should be boiled beforehand.
